Just like local farmers have done all their life, we mix lean meat, snout, pig’s blood and sweet onion from the village. Once made into a sausage we boil it over a low heat. No bread is added to make it suitable for coeliac sufferers.

Very mellow and gelatinous… slightly salted with a touch of pepper.

Production

Boiled in a pot over a low heat.
